The Caturra Bourbon is a carbonic macerated Colombian coffee farmed by Rodrigo Sanchez. Carbonic maceration involves a step in the fermentation process which entails placing selected coffee cherries in fermentation bins and replacing all the oxygen with CO2 for 70 hours before being pulped. This results in increased acidity which tend to produce intense sweetness and texture in the cup.
