Grind your coffee, starting with a ration of around 20g coffee to 250ml of water.
The finer you grind your coffee the stronger the brew.
Boil your water to 95’C and insert the paper filter into the brewer.
Run boiled water through the blank filter; removing any papery taste and simultaneously warming up the Chemex.
Remove this water and add your coffee to the brewer, onto the filter.
Place your Chemex onto a scale and begin brewing by adding around 50ml of water. Make sure all the coffee is exposed to the water and allow it to bloom.
Leave for around 40 seconds before starting your second pour.
Add the rest of your water to the coffee, consistent with your ratios, and allow the coffee to slowly seep through the bed of coffee extracting all the weird and wonderful flavours.
Once the water has passed through remove the filter with the coffee grounds and dispose of it.
